These are just fabulous for breakfast or a quick snack. They have so much protein in them and they are also loaded with vitamins from the veggies!! If you are looking to lean down, I suggest you make these and keep them stalked in your fridge. The best part about them is you can eat four muffins for breakfast and feel zero quilt because they are so dang low in calories! I find they taste best with hot sauce drizzled on top (if you like hot sauce of course). Sometimes I even add a couple dashes of Frank’s Red Hot Sauce before I even put them in the oven. Just add a few dashed into the veggie mixture. This will give the muffins a more smoked pepper taste. Definitely experiment with what you like.
Depending on how full you fill your tins up, they will cook at different speeds. Always keep an eye on them as they are baking. Sometimes I find my muffins will take 25 minutes and then other times I feel like they are closer to thirty minutes. It is really all about getting to know your oven (as I always say). Make sure you heat them up before you eat them again if you do store them in the fridge or freezer in a sealed container. Enjoy!
