I came across this recipe when I was in Costa Rica about three years ago. We were sitting on this beautiful quaint patio overlooking the Santa Teresa jungle. We had breakfast at the same place every single day when we were on this vacation. Everything at this breakfast place was vegan and gluten free. Every morning, they always had a fresh smoothie-of-the-day prepared for us to sample. I remember taking my first sip of this basil pineapple smoothie and thinking “holy moly, this is freakin’ delicious!”.
At this point in my life I had never thought herbs belonged in smoothies – in fact, I don’t think I put anything other than the same six ingredients into my smoothies at home. I always used: peanut butter, blueberries, banana, orange juice, vanilla yogurt and some 1% milk… It was the same concoction every time… What was so wonderful about my trip to Costa Rica was it inspired me to try different smoothie arrangements in the kitchen and to think more plant-based in all aspects of my cooking. Before Costa Rica I never thought to even try a vegan diet. I am so thankful that I took the chance to explore nourishing my body in a different kind of way.
The smoothie I tasted in Costa Rica was coconut-water based… I however, took this idea home and revamped it to be more creamy. If you are not feeling the creaminess in this recipe, do feel free to switch the coconut milk to coconut water. If you are loving the creamy and want an extra treat, adding a scoop of coconut ice cream sometime makes one delicious mylkshake! The health properties in this smoothie are endless. Basil for starters is great for reducing stress, promoting clear skin and detoxifying your body inside-out. Coconut as every knows is a fantastic superfood loaded with electrolytes and healthy fats. And pineapple and spinach are both loaded with Vitamin C for good immunity! Drink up 🙂
