This bar is so delicious… I got the idea from my father who is a wonderful cook. In this bad boy is lots of healthy nuts, seeds, grains and antioxidants. You can easily make this bar for a healthy dessert as it is on the sweeter side.
You certainly do not have to add the dark chocolate drizzle at the end if you are going for a healthy protein bar. There are three reasons I love making my own granola bars. One, you know what ingredients you are eating. Two, you save the earth from plastic wrappers and other packaging that come along with store-bought bars. Three, they are inexpensive.
I love putting one of these squares in my purse when I head out to work because they give you a bit of energy when you need a pick-me-up. Have fun with this bar! If you don’t like the nuts and seeds, swap em’ out with something else. Sometimes I put dried blueberries instead of cranberries. If you really want a treat, add half a cup of vegan chocolate chips into the oat mixture! I use to make this bar with almond butter instead of peanut butter – that was until I discovered how much water it takes to produce a single almond ( 1 gallon or more per nut, yikes). This version tastes just as awesome 🙂
