Boy was this ever delicious and so simple! If you have a busy night ahead of you this dish is fast, low in calories and also extremely nutritious. Since I have been striving real hard to cut down on my meat intake, I am constantly looking for delicious meat alternatives. That is when I came across shitaki mushrooms.
I have always loved mushrooms in general. I think they are so hearty! I’m also obsessed with Montreal Steak Spice… That is when I decided I needed to combine the two together – and let me tell you – magic happened.
If you do not own Montreal Steak Spice, you can make it from scratch with this recipe here. You can also rock this dish with plain old salt and pepper. The veggies are so delicious, it doesn’t even need much seasoning! This dish is loaded with healthy antioxidants, fibre, Vitamin C, cancer fighting vitamins and so much more! If you don’t own a spiralizer, you can use a julienne slicer or even a vegetable peeler to make your zucchini noodles. I do recommend in investing in one of these options if you are keen in cutting calories or increasing your vegetable intake. If your zucchini noodles turn out really thin, I would recommend switching your fusilli noodles to spaghetti noodles. This will make eating the bowl much easier. Enjoy 🙂
