Happy Lover’s Day!! Yesterday I whipped up this delicious raw tart for my whole family to enjoy. My boyfriend loves a good cheesecake, so I thought, why not make something for him in spirit (he lives in South Carolina)?! Thank you Vegan Family Recipes for kick starting this dessert idea. I have been craving a raw coconut creamy dish for a couple week – and boy – did this give me what I needed.
I must say, this tart tastes different then I expected. I thought the coconut cream would come out way less ‘coco-nutty’ and way more cheese-creamy; which yes I realize sounds stupid! That being said, if you love coconuts, then this is going to be the dessert for you my friend!
The best part of this dish is the fact it takes fifteen minutes to make (before freezing). If you are having a last minute gathering, I definitely recommend whipping this up. Not only will you wow your guests, but you’ll also know you’re indulging in a fairly guilt-free treat; as it is filled with great nutrients. I love the fact the filling has good fats from both the coconut and the cashews. As for the crust, as my dad says, “Dates are good for you. Dates keep you very regular!”. So you can carry that nutritional knowledge with you as well!
Usually I shy away from dessert recipes for a couple reasons. One, they are never all that ‘healthy’. Two, they usually take forever to make. This recipe, however, is fast and nutritious! I know it is too late to try this number out for Valentine’s Day, but try it this week and tell me how it goes! With Love, E xo
