In North America, everyone is obsessed with Pumpkin Spice! Pumpkin Spice Latte, pumpkin spiced protein powder, pumpkin spiced condoms… It is everywhere! Personally, I love pumpkin spice, but not as far as buying it in protein powder or condom form. I know it is Spring now, and pumpkins are not in season, but I have all this leftover Trader Joe’s Pumpkin Pie Spice seasoning to use up!
Today I am going for a long 8K run. That being said, I wanted to prepare a huge bowl of delicious oats to really fuel my fire. Normally when I make overnight oats, I only use 1/2 cup of oats verses 2/3 cup… But ever since I have gotten back into running longer distances and pilates, I feel I need a lot more food in the morning. If you feel like this recipe is too much for breakfast, just leave half of it for the next morning or an afternoon snack. You can also just reduce the oats and cashew milk both to 1/2 cup as well. It will just have stronger flavour.
I prepared this oat jar in layers to make it more visually appealing. You do not have to separate all the parts of the parfait like I did… You can simply combine all the ingredients together in a bowl or jar, stir and eat it without the layers. Even I usually end up pouring all the oats into a bowl in the morning if I am eating breakfast at home. It is just easier that way. I promise you this breakfast is super filling! It keeps me going for hours, which is why I love it so much. The best part about eating overnight oats is they are fully raw. When you eat raw food, your body takes in more nutrients than it would with cooked food. I added a small dollop of pumpkin butter on top of my oats in the morning. If you want to add something creamy as well, but don’t have pumpkin butter, almond or cashew butter would taste fabulous with this combination.
