I think I have made 100 different banana bread recipes over the last couple years. That being said, this has always been one of my favourite ones. It is so incredibly moist and nutty. The best part of this recipe is the fact you can easily throw it into one bowl and you are done. There is very little mess to clean up afterwards… score!
I absolutely love the fact this bread is refined sugar free. If you find it is not sweet enough, you can always add a pinch of stevia extract or a squirt of maple syrup. You do not need to add the chocolate chips if you do not want to. Eighty percent of the time I make this bread, I usually leave them out. But if you want an extra treat, add them! I always use dark chocolate chips that have zero added sugars or vegan chocolate chips.
You can make this banana bread plant based! All you have to do is substitute the two eggs for flax eggs. To make flax eggs use 2 tablespoons of ground flax seeds and 6 tablespoons of water. Let that sit for five minutes before throwing it into the bowl. This version is just as delicious. This banana bread is perfect paired with a cup of tea or a cashew milk latte. Ever since I was a young girl I always loved having a baked good and a warm drink around 3pm. It is the best pick me up. Try not to eat all of this bread in one sitting 😉
