These veggie rolls are very much a game changer. They are basically a salad in wrap form… If you are feeling under the weather or you simply need more vegetables in your diet, these rolls are perfect for pumping nutrients into your system. They are also extremely light on the tummy, yet so filling… Perfect for Spring and Summer!
If you want to make these veggie rolls more ‘main dish’ or ‘entree’ like, feel free to add some tofu, edamame, prawns, or smoked salmon. The protein will keep you fuller for longer.
Please do not feel like you’re limited to the veggies combination I have suggested. Get crazy in the kitchen. Sometimes I like basil in my rolls… Some days I prefer cilantro. If you don’t like avocado, don’t use avocado… It is all up to you my friend! My boyfriend likes to dip these veggie rolls in Sweet Red Chili Sauce. If you are taking these as an appetizer to a party, I suggest you bring both the peanut sauce and the sweet chili.
