Oh wow, oh wow… Fried Cauliflower, where have you been all my life? This dish is incredible healthy – yet it is so dang delicious! My boyfriends family gave me the idea to start using cauliflower as a rice substitute back in the summer. Cauliflower ‘rice’ is more nutrient and fibre dense than regular rice… Plus it is super low in calories. If you are looking to lose weight or to increase your veg intake, this is such an easy way to do so!
I use a cuisine food chopper to make the ‘rice’ consistency with the cauliflower. And yes, a food chopper is pretty much a ‘Slap Chop’… Those infomercials are hilarious – but I actually love it! My mom got it for Christmas. I don’t use it that regularly, but for this dish I use it 100%. You can cut the cauliflower up yourself. Just make sure it is chopped very finely.
I like this dish as a side because it already has so much flavour, you don’t need to eat it with much else. If you are feeling adventurous, you can always add some tofu into the scramble and make it a main dish. If you want to add some protein, you can always add some beans too.
This dish won’t take you very long. I hope you enjoy it as much as I do. This is high in fibre and Vitamin A. Make sure you don’t fry the cauliflower for too long or it will get saggy. Let me know how you like it in a comment below!
