I had these this morning as a little Friday treat! I shouldn’t even say ‘treat’ because these pancakes are pretty dang healthy! The added spinach and matcha give these pancakes a kick of antioxidants and extra energy! I should also mention that these taste heavenly – or at least I think so. For toppings, you go ahead and add whatever your heart desires.
Today I added some dark chocolate covered sesame seeds, cacao nibs, yogurt, blueberries, goji berries, chia seeds and bananas! These will also pair greatly with apple sauce, berry sauce, jam, nut butters, seeds, maple syrup or agave syrup, coconut whip and everything else you love!
I tried making these with one chia eggs (1 tbsp ground chia + 3 tbsp water) and one flax egg replacement (1 tbsp ground flax + 3 tbsp water) instead of the eggs. Just let the chia and flax soak in the water for three minutes before adding the combination to the blender. If you choose this plant based version definitely add less (if any) coconut milk or they won’t stick that well. When I made them in plant based form, they only turned out okay.. I always find egg replacements never work well in pancakes. They just don’t stick that well together!! I don’t know why. If you have any tips, please comment below.
