Holistic Nutritionists always preach the benefits of eating pure raw food. I try to eat at least 30-40% raw food in my diet a day… Raw food is great for increasing your vitamins and minerals. When you apply heat to your cooking, the food structure often changes, decreasing your value of nutrients.
I love overnight oats, but sometimes I get sick of them. One morning I decided to put my oat combo into a blender. It turned out really well. This dish reminds me of my favourite childhood breakfast, Cream of Wheat. Of course I can’t eat Cream of Wheat anymore because it has gluten in it. This is certainly a great runner up.
Cashews are my new go-to nut. They are loaded with niacin; which is a good mood stabilizer. They soak incredibly well in milk and water. I can’t use them enough in my cooking. You can always sub the oats for buckwheat groats if you want to change it up. You may need to add more plant milk in this version. Sometimes I like to do 1/4 cup buckwheat groats, 3/4 cup oats. It tastes delicious. I usually split this recipe into two servings. I like to top this porridge with some Tempt Greek styled yogurt, fruit and dark dairy free chocolate chips. If you want some extra antioxidants, I suggest adding in some spinach or matcha powder when you blend. Enjoy!
