This risotto just took cooking veggies to a whole other level. Risotto is one of my favourite comfort foods. It has been for years. But the problem with regular risotto is it is not very nutrient dense. This risotto however, is so delicious yet totally guilt-free.
This dish can easily be made plant based. You can take away the prawns and change the parmesan cheese to vegan parmesan cheese. Other than that, I always try to stick to healthier vegan options. I use Daiya Cream Cheese instead of butter to finish this dish off. The added creaminess will have you craving no more after you’ve finished you food.
Eating clean wholesome food does not have to taste gross. This creamy risotto is the perfect dish to make at this time of year when it is freezing outside and all you crave is comfort food. Again, if you are not a prawn person, you can either make this protein-less or even add something else if you prefer. Serve this dish nice and hot as a side or even a main.
