Okay pancake lovers, I have a new recipe for you. These pancakes are extremely moist and delicious; perfect for a lazy Saturday or Sunday morning. This recipe is also a one-dish-wonder, which means you have little to clean up after – SCORE!
If you do not own any coconut flour, you can easily substitute that for another 1/4 a cup of grind oats. I personally love coconut flour. It has a very creamy sweet-nutty texture. I really recommend you try it sometime.
As for toppings on this bad boy, I used some yogurt/coconut whip with berries. Don’t forget your warm maple syrup too! You can’t enjoy a good stack of weekend pancakes without that drizzled on top. Enjoy 🙂
