I have been living off this porridge for weeks… So it is safe to say I’m obsessed! It has a very creamy nutty base. Every morning I like to experiment with different toppings – as you can see in these photos.
I usually make a big batch of this Sunday night and store it in the fridge for my whole family to enjoy all week. It really makes week day morning’s nice and easy. You wake up, reheat a bowl of porridge, add your fav toppings, eat it, then you are out the door. It is like gourmet in a flash! This dish is super filling; perfect for those that need a big boost of energy in the morning.
This porridge will lasts about three to four days if you keep it in a sealed container. This recipe does call for a lot of plant milk – which can be expensive. If you want to reduce your cost, you can always alternate 1 cup plant milk – 1 cup water. That being said, it tastes way way way better with 100% plant milk. I usually use So Good Coconut Milk for the first seven cups and then for the last cup, I add a cup of homemade cashew milk for the extra creaminess. I should probably forewarn you that this recipe can take up to an hour to make – so plan accordingly. I like to make myself a big cup of green tea and dance around the kitchen to burn some calories in the mean time. I am such a loser – I know.
