I got this recipe out of the Oh She Glows Cookbook by Angela Liddon. The recipe is called Delicate Squash, Kale and Millet Salad with Lemon Tahini Dressing. If you own the book I suggest you try this number out.
I did make a couple changes. I wanted to use up the leftover frozen butternut squash in my freezer, so I roasted those instead of buying delicata squash (which looks beautiful by the way). I also did not have any nutritional yeast in my kitchen, so I added miso paste instead and it worked out pretty well.
This salad is great for lunches. If you stick it in a mason jar layering the salad in this format: dressing, kale, millet, seeds/squash/nuts/berries… It will lightly massage and soak the kale real nicely. I hate eating super tough kale. It hurts my tummy! Sadly, I don’t have the link to direct you to this recipe (as it is in a her first cookbook), but her website is here for more delicious food.
