My boyfriend and I are obsessed with yam fries and garlic mayo. Instead of ordering them from a fast food place, I started messing around with my own healthy home-made version! My boyfriend is a pro-hockey player, so I try to feed him as healthy as possible. You can serve these fries as an appetizer or as a side dish. Sometimes I even make these for a late afternoon snack. They are very versatile and nutritious! When you cut up your yam fries, make sure they are quite thin and small. If you don’t make them thin, they will not be crispy.
You can coat the fries in two different ways. One, you can use a non-stick cooking spray. I use this one from Trader Joes. This way of coating the fries will be the least amount of calories. Second way is: you can toss your raw yam fries in 1 Tbsp of melted coconut oil. While this method has more calories, you’ll receive more nutritional benefit from the pure coconut. Both ways work great! I find the oil-spray can leave a more crispy effect.
After coating your fries with oil, add lots of salt and pepper! Not only are these fries absolutely addicting, but they are also full of wonder fibres and nutrients. Yams and Sweet Potatoes are loaded with Vitamin B, potassium, Vitamin C, iron… I could keep going. Feel free to swap your yams with sweet potato. They work exactly the same. In fact, sometimes I wonder if there is even a difference.
As for the lemon garlic mayo, you can totally substitute the regular mayo for vegan mayo! If you want to make this sauce healthier, you can try mixing 2 tbsp of regular mayo with 2 tbsp of greek plain 0% yogurt versus all mayo. Be forewarned – once you make these fries, you will never go back. They are too good!
