This salad is sweet, delicious and super easy to make! I have recently developed a sweet potato obsession. Ever since I went gluten free, sweet potatoes and yams have sort of taken the place of bread in my diet. I eat it with eggs, by itself, in salads, for breakfast, etc. I just love it!
This dish is perfect for breakfast, lunch, dinner, as a side, you name it! I think having veggies for breakfast is one of the best ways to start a day. Sweet potato has lots of Vitamin A and C; plus it is loaded with fibre! Plus the almond butter is filled with good fats to give you a kick of energy. This recipe only serves about one person; as I only ever cook for myself lol. That being said, if you want to make a huge batch for your friends one day, go ahead and triple the recipe. You may need to add some extra almond butter if you do this. I recommend eating this dish hot; that way the almond butter is forced to melt. Enjoy 🙂
